We are forthright: We do not like to provide distilled spirits prior to dining; this numbs the palate and detracts from the culinary experience.

Environmental Sustainability
Where quality allow we try to source our produce from environmentally conscious suppliers.
- Our scallops are selected from the sea bed by divers, not indiscriminately dredged by boats.
- Our fish is line-caught, both for freshness and sustainability of stocks.
- Our meats are carefully chosen for their qualities texture and flavour are greatly enhanced through farming practices which allow animals to reach maturity in a natural environment.
- Many of our wines are now imported from vineyards who reject the use of chemically formulated fertilizers and pestecides.
- We recycle all of our packaging materials.
